课程简介：本课程是面向全校学生的通识课程，是一门综合性很强的课程，基础理论性和实践性均很强。发酵工程与人们生活密切相联系，本课程通过介绍生活中与发酵工程相关的典型产品及应用实例，如黄酒、啤酒、醋、酱油、腐乳、酸奶、抗生素、生物药物、发酵饲料等产品生产，微生物的污水处理、冶金、沼气发酵等应用，系统阐述发酵工程的原理、菌株、发酵工艺条件及应用情况，让学生能全面感受到生活中与发酵工程密切相关的产品和事件，揭示微生物发酵的神秘面纱，让其更好地为提高人民生活贡献力量，更好地为人类健康服务。
